Chicken Roast

 Chicken roast recipe is a very common recipe. Everybody can roast a chicken less or more. Roasting is a cooking process that uses dry heat, whether an open flame, oven, or other heat source. It can enhance flavor through caramelization and Maillard browning on the surface of the food. Roasting uses indirect heat.  Any piece of meat, especially red meat, that has been cooked in this fashion is called a roast. Low heat is needed to make a roast. Chicken roast recipe is very popular all over the world. Child and old all kinds of people like chicken roast recipe. it is not only delicious but also nutritious. The cooking process is given below;

                                                                                 Ingredients:
  • 2×1 kg (2 lb) chickens
  • 1 cup chopped onion
  • 1 cup ghee or cooking oil
  • 1 cup yogurt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground garlic
  • ½ tablespoon ground black pepper
  • 1 tablespoon ground poppy seeds
  • ¼ teaspoon ground mace
  • ½ teaspoon ground cinnamon
  • ½ cup keora water
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • Salt to taste
Preparation:
1. Heat the oil. Fry the onion brown. Strain and remove. Set aside.
2. Skin the chickens, keep them whole or cut each into 4 pieces. Fry the chickens lightly in the remaining oil for about 10 minutes. Remove pan from heat and let it cool for 15 minutes.
3. Crush the fried onion. Mix together the onion, salt, yogurt, ginger, garlic and add to the chicken. Add 1 cup of water. Put lid on and cook over a low heat for about 2 hours, stirring from time to time.
4. Combine the black pepper, poppy seeds, mace, cinnamon and cardamom and make paste with a little water. In middle of cooking turn the pieces of chicken, baste them with the mixture of spices and sprinkle keora water.
5. When the meat is tender sprinkle the lemon juice, sugar, and adjust the taste. Keep over very low heat till serving.

Serve with parata or chapatti. Yields 8 servings.
