Ground Meat Kebab
(Kima Kabab)

Meat recipes are available all over the world. Recipes with ground beef is one of them. Kebab is one of the most delicious snacks in the Indian sub-continent. There are many kinds of kebabs. Ground meat kebab (Kima kebab) is one of them. It is a tasty food. Kima kebab is prepared with beef, mutton etc. The people of Bangladesh, India. Pakistan etc. are fond of ground meat kebab (Kima kebab). I am very much interested with meat recipes. So I chose recipes with ground beef. Some spices are essential for preparing ground meat kebab. The cooking process is given below;

Ingredients:
  • 1 kg (2 lb) ground beef or mutton
  • ¾ cup cooking oil
  • 2 cloves
  • 2 bay leaves
  • 3 cardamoms
  • 2 sticks 2.5 cm piece cinnamon
  • 4 green chillies, pared
  • ½ cup yogurt
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground cumin
  • 2 teaspoons ground ginger
  • 2 teaspoons ground garlic
  • 2 teaspoons ground coriander
  • ½ teaspoon ground  black pepper
  • 1 teaspoon sugar
  • Salt to taste
How to prepare:
1. Combine the bay leaves, cardamoms, cinnamon, cloves, green chillies and cumin seeds.
2. In a frying pan heat oil, fry the onion golden brown. Remove the pan from heat, stir onion for 30 seconds, then take out the onion from the pan straining the oil.
3. Return the pan to heat, add the mixed spices into the remaining oil, stir and fry lightly over a low heat.
4. Remove the pan from the heat and drain out spices from oil. Grind the fried mixed spices and fried onion together. Set aside.
5. Place the meat in the pan; add rest of the spices, yogurt, sugar, salt and 1 cup of water. Cook over a low heat till meat is tender. Fry meat till water dries up and oil separates.
6. Add the fried ground spices, stir and keep over a low heat for 10 minutes.

Serve Bhuna Kebab with parata, luchi  or chapatti. Yields 6 servings.
