Meat Kebab
(Boti Kebab)
Kebab recipe is one the most favourite recipes in the sub-continent. Kebabs are very delicious snacks. The another name of meat kebab is Boti Kebab.  Boti kebabs are made from fillet of meat and is popular in Multan, Pakistan. Sometimes marinated with green papaya to help tenderize the meat. Meat and some ingredients are needed to make this recipe. The preparation procedure of this recipe is given below;
Ingredients:
  • 1  kg lean boneless mutton or lamb
  • ½ cup chopped onion
  • 2 teaspoons ginger paste
  • ½ tablespoon ground coriander
  • ½ tablespoon chilli powder
  • ½ tablespoon turmeric powder
  • 1 cup yogurt
  • 1 teaspoon lemon juice
  • 2 tablespoons cooking oil
  • ½ tablespoon garammasala powder
  • salt to taste
How to prepare:
1. In a mixing bowl prepare marinade combining half of the yogurt with the ginger, coriander, chilli powder, lemon juice, salt and oil. Add onion and meat cut into 5 cm (2”) cubes. Rub the meat with the marinade very well. Marinate for 1 hour.
2. Add garamamsala and chilli powder to the other half of yogurt and whisk.
3. Add the meat and transfer to a pan. Cover and cook over moderate heat till the meat is about done,
4. Remove lid and let all the moisture evaporate till thick gravy remains.
5. Skewer the meat pieces, put on a tray and roast on a medium hot oven turning regularly till all sides are browned.

Serve hot chapatti, luchi or parata. Yields 6-8 servings.
