Mixed Vegetable Curry
(Niramish)

Vegetables are very useful for our health. So vegetable recipes are currently available all over the world. We can cook various items of recipes with vegetables. Mixed vegetable curry is one of them. Niramish is one of the parts of mixed vegetable curry. The vegetarians are fond of niramish. It is very nutritious. Some spices are needed to cook this recipe. Its cooking process is not very difficult. The cooking process of mixed vegetable curry is given below;
Ingredient:
  • 275 gm (10 oz) green papaya
  • 275 gm (10 oz) carrots
  • 1 green banana
  • 2 aubergines
  • 275 gm (10 oz) sweet potatoes
  • ½ small cauliflower
  • ½ teaspoon ginger cumin
  • ½ teaspoon ground coriander
  • ¼ teaspoon ginger paste
  • ¼ teaspoon ground turmeric
  • ¾ cup cooking oil
  • 1 teaspoon panchforan
  • 1 bay leaf
  • 4 pared green chilies
  • Sugar to taste
  • Salt to taste

Method of Preparation:
  1. Peel the banana, cut into cubes and rub with a little turmeric.
  2. Boil in water for three minutes and drain.
  3. Wash peel and make cubes of the vegetables.
  4. Place the vegetable in a saucepan except the banana, aubergine and pumpkin.
  5. Combine the paste and ground spices, mix with vegetables in a saucepan.
  6. Pour water just to cover vegetables. Put lid on cook over moderate heat.
  7. When vegetables are half cooked, add green banana, aubergine and papaya.
  8. Cook covered. Add water if needed. Add salt and sugar; correct the taste when vegetables are soft. Stir and remove from heat.
  9. Hit the oil in a pan. Put in the panchforan and stir quickly. Add the bay leaf and green chilli, stir for 30 seconds.
  10.  Pour in the vegetables, stir once and bring to a boil.

Serve hot with rice or bread. Yield 6 servings.
