Chapatti

Roti is also known as chapati or fulka. Roti is Indian flat bread made with whole-wheat flour. Roti is served with a variety of cooked vegetables, lentils, and yogurt. It is a common recipe. Chapatis are one of the most common forms in which wheat, the staple of northern South Asia, is consumed. Chapati is a form of roti or rotta (bread). The words are often used interchangeably. While roti or rotta refers to any flat unleavened bread, chapati is a roti made of whole wheat flour and cooked on a tava (flat skillet). Chapatti is easy to make. The preparation is here;

Ingredients:
2 cups whole wheat flour
1/2 cup water
Salt to taste

How to prepare:
* Combine the flour and salt in a bowl. Add 1/2 cup of water and knead well. Cover the dough and let it stand for 30 minutes. Make 6 balls.
* Roll out each ball into a 12 cm (4.5") round chapatti.
* Heat up a heavy base frying pan until a drop of water in it sizzles. Pick up one chapatti, lay it on the frying pan. Cook for about 40 seconds till the surface of the chapatti puffs like small bubbles.
* Turn it and cook for about 30 seconds. A chapatti may puff fully. Stack the cooked chapattis  together, wrapped in a clean tea towel.

Serve hot with bhaji, curry or achar. 4 servings.
