Dalpuri

Dalpuri is a vegetarian dish. It is a common recipe. Dalpuri is found in the restaurants of Bangladesh, India, Pakistan and some other countries of Asia. Specially India is famous for dalpuri. Dalpuri is one kind of snacks. It is very delicious recipe. Everybody likes such kid of vegetarian dish. Dalpuri recipe is very suitable for vegetarians. The method of preparation is as follows;
Ingredients:
1/2 cup lentils
1/4 teaspoon ground ginger
2 teaspoons chopped onion
1 green chilli, chopped
2 dry red chillies (optional)
1/4 cup thinly sliced onion
1-2 tablespoons  chopped mint or coriander leaves
6 tablespoons oil
4 cups flour
Oil for frying
Salt to taste

Preparation:
1. In a saucepan  put the lentils, ginger, chopped onion, green chilli, salt and 3/4 cup of water. Bring to a boil, cover and simmer till water is absorbed. Stir constantly, when the lentil blinds into a lump and looks dry remove from heat.
2. In one teaspoon of oil fry the red chillies until crisp. Remove from the frying pan. Add 1/4 cup of oil in the frying pan and saute the onion golden brown. Strain and spread onion to become cool and crisp.
3. Crush the red chillies and onion. Add mint leaves and mix with the lentils. make 20 balls.
4. Rub 6 tablespoons of oil and salt into the flour and add water (about 1/2 cup) to make dough. Knead well. Make 20 balls.
5. Stuff each ball of dough with a ball of the lentil-mix, seal carefully. Sprinkle a little flour over a breadboard and roll out the balls into round discs keeping the sealed face downward.
6. heat oil to sizzling point. Fry the puries golden brown.

Serve hot at breakfast or tea with tamarind sauce or tomato catsup. 10 servings.
