Fried Mutton
(Bhuna Khashir Mangsha)

Mutton fry is a common recipe all over the world. Mutton is available everywhere of the world. Various types of recipes are prepared from mutton. Fried mutton is one of them. Mutton is rich in protein. Mutton fry is not only delicious but also nutritious. Mutton fry is available in the restaurants in south Asia. The method of preparation of the recipe is given below;
Ingredients:
* 2 kg (4 lb) lean boneless mutton or lamb,
6 whole red chillies,
1 tablespoons chopped ginger,
2 tablespoons crushed garlic,
1 cup slices onion,
1 tablespoon coriander seeds,
1 tablespoon cumin seeds,
2 tablespoons peppercorn,
6 cardamoms,
4 sticks 2.5 cm piece cinnamon,
1 cup cooking oil,
Salt to taste.

How to prepare:
1. Cut the meat into 250 gm ( 1/2 lb ) pieces. In a saucepan place the meat, chillies, ginger, garlic, onion and coriander.
2. Add 5-6 cups of water. Cover the pan. bring to a boil and simmer till meat is tender. Add salt and rest of the ingredients. Stir, cover and keep over a low heat until the water has been taken up.
3. Fry meat stirring constantly for about 10-12 minutes, until oil separates out.
4. Serve hot with chapatti, parata, pullao or fluffy boiled rice.  10-12 servings.
