Mutton Tehari
Meat recipes are very popular all over the world. Mutton is a part and parcel of meat. We can prepare various types of recipes with meat. Mutton Tehari one of them. Meat is available all over the world. So meat recipes are also available as well. When I was a student of college level, I learned about meat recipes. So this is my small effort to prepare this recipe. The cooking process is cited below;
Prep Time:  45 Min.   Cook Time: 60 Min.    
Ready In: 90 Min.  Servings: 08

 Ingredients:
* 700 gm ( 1½  lb) mutton
* ½  teaspoon ground black pepper
* ½  teaspoon ground nutmeg
* 1/4 teaspoon ground mace
* 1 tablespoon ground ginger
* 1 teaspoon ground garlic 
* 1/2 cup chopped onion
* 3 sticks 2.5 cm piece cinnamon
* 4 cardamoms
* 1/2 cup yogurt
* 3/4 cup cooking oil
* 10 green chillies
* 500 gm ( 1 lb ) pullao rice or basmoti rice
* 1/2 tablespoon sugar
* 1/2 cup milk
*Salt to taste

Cooking Process:
Step 01
Cut the meat into small cubes. Mix together the ground spices, onion, cinnamon, cardamoms, yogurt, oil and salt.

Step 02
Add the meat, mix well, cover and cook over a low heat until mutton is tender. Stir and fry meat till water dries up.

Step 03
Add chillies, rice, salt, sugar, milk and 3 cups of hot water. stir, cover and cook over moderate heat (for about 18 minutes) till the water has been taken up and the rice is cooked. Don't open the lid for half an hour after removing from heat.

Serve hot with salad.
