Potato Curry

 Potato curry recipe is very common all over he world. Potato is produced in plenty all over the world. Potato contains carbohydrate. It is very suitable for our body. Potato curry recipe is one of the most delicious recipes of the world. It is very easy to cook potato curry recipe. The process is as follows;
Ingredients:
450 gm (1 lb) potatoes,
½ cup cooking oil,
3 tablespoons sliced onion,
1 bay leaf,
½ teaspoon cumin seeds,
½ teaspoon ground turmeric,
½ teaspoon chilli powder,
½ teaspoon ground ginger,
1 teaspoon ground coriander,
½ teaspoon roasted cumin, powder,
¼ teaspoon roasted dry red chilli, powder,
2 cardamoms,
2 sticks 2.5 cm piece cinnamon,
1 -2 tablespoons sugar,
1 – 2 tablespoons tamarind puree,
Salt to taste.
Cooking Process:
·         Boil the potatoes, peel and cut into small cubes. Make some of the cubes half broken. Heat the oil. Add the cumin seeds, bay leaf and onion. Stir and fry the onion brown.
·         Except the roasted cumin and chilli powder, add rest of the spices and 1 cup of water. Cook stirring regularly. When oil surfaces, add the potatoes, sugar, salt and tamarind.
·         Add 2 – 3 cups of water and simmer till gravy is little thick. Transfer into a serving bowl, sprinkle with the roasted cumin and chilli powder.

Serve with luchi or parata. Yields 6 servings.
