Vegetables Fried in Batter
Fried vegetables are very beneficial to our health. It is healthy recipe. Vegetables fried in batter  is one of the crucial recipes for us. Most of the people choose such kind of recipe. Fried vegetables keep us healthy. It is a cheap recipe. The preparation is as follows;
Ingredients:
2 cups flour,
½ cup cooking oil,
2 tablespoons sugar,
¾ cup water,
500 gm (1 lb) pumpkin, aubergine, palwal, cauliflower etc.
Oil for frying,
Salt to taste.
Directions:
1.      Rub oil into the flour. Dissolve salt and sugar in water, add to the flour and mix them to make a thick batter so that it sticks to the vegetables. Leave to rest for 2 hours.
2.       Slice pumpkin and aubergines 1.2 cm (1/2”) thick. Scrape palwals and pare lengthwise. Separate cauliflower into small florets (select any one variety of the vegetables for frying).
3.      Mix salt with the vegetables. Leave it for 10 – 15 minutes. Heat oil ina deep frying pan. Dip one slice of vegetables into the batter, fry in deep fat until brown and crisp. 3 – 4 slices can be fried at a time.

Serve crisp and hot with bhuna chichuri or pullao at lunch or dinner. It may be served with tea also.
