Mutton Rezala
( Khashir Rezala)

Ingredients:
2 kg (4 lb) mutton,
1 cup finely chopped onion,
2 tablespoons ground ginger,
5 cardamoms,
1 cup yogurt,
1 cup ghee or oil,
20 green chillies,
2 tablespoons keora water,
1 tablespoon raisins,
2 tablespoons shredded almonds,
Salt, sugar, and lemon juice to taste.
How to prepare:
1. Make moderate - sized pieces of mutton. In a cooking pan, heat oil and fry the onion brown. Add the meat, ginger, garlic, cinnamon, cardamom, yogurt, salt, ghee and 2 cups of water.
2. Mix well, cover and cook over moderate heat for about 25 minutes.
3. When gravy thickens, add the sugar and lemon juice to taste, simmer for about 45 minutes stirring from time to time. Add the green chillies, raisins and keora water and keep over very low heat for about 1 hour. Garnish with almonds.
Serve rezala with plain pullao, fluffy boiled rice, chapatti or parata. Yields 10 - 12 servings.
